Union Square Cafe Spiced Nuts
- 1/4 pound each peeled peanuts, cashews, brazil nuts, hazelnuts, walnuts, pecans, and whole unpeeled almonds or 1 pound unsalted, assorted nuts (or a mixture of whichever you prefer!)
- 2 tablespoons coarsely chopped fresh rosemary
- 1/2 teaspoon cayenne
- 2 teaspoons dark brown sugar
- 2 teaspoons kosher salt
- 1 tablespoon butter, melted
2. Toss the nuts in a large bowl to combine and spread them out on a cookie sheet. Toast in the oven until they become light golden brown, about 10 minutes.
3. In a large bowl, combine the rosemary, cayenne, brown sugar, salt, and melted butter.
4. Thoroughly toss the warm toasted nuts with the spiced butter and serve warm or at room temp.
ps--Never been to Union Square Cafe, I think its in New York City...

i used to use a similar recipe with pecans (becca from becca's gave it to me) ... and i love the little kick from the cayenne.
had to tell you, i made the zucchini basil soup the other day, HUGE hit with Alex.
My aunt loves that zucchini soup recipe too! Alex has sofisticated taste =)
