To celebrate the season, I made a lovely fresh salad with elements of my produce box and aero garden (this is not a science guys, use as much of each ingredient as you want)
Fresh lettuce: choose whatever looks the best at the store (choose a light lettuce like green leaf or spring mix, not iceberg or romaine)
Fresh herbs (parsley, mint and dill work nicely...just tear the leaves off the stems)
Cheese (Parmesan or Manchego, something hard)
Lemon
Olive oil
Salt and pepper
Easiest directions ever:
Add a few handfuls of the herbs to the lettuce. Squeeze with lemon (1/2 for a small salad, a whole lemon for a large salad), and drizzle with olive oil. Sprinkle with salt and freshly cracked pepper. Mix (works best with your hands). Using a vegetable peeler, top the salad with big, beautiful peels of cheese.
Mmmmm...the herbs add such a fresh, springy-ness to the salad!
